Vanilla Yoghurt Panna Cotta With Balsamic Thyme-roasted Peaches and Nectarines

An elegant and lightly sweetened creamy dessert.

Ingredients  

  • 520 g Milky's Set Yoghurt
  • 50 g Granulated sugar
  • 2 ½ tsp Unflavored gelatin
  • 60 ml Water
  • 1 tsp Pure vanilla extract
  • 470 ml Milk
  • ½ Lemon
  • 2 Peaches
  • 2 Nectarines
  • 120 ml Balsamic vinegar
  • 2 tbsp Honey
  • 3 sprig Fresh thyme
  • 1 pinch Salt
  • 1 pinch Black pepper

Method

  1. In a small bowl, place water and stir in gelatin, then set aside for 15 minutes until the gelatin softens.
  2. Whisk yoghurt, vanilla extract and 1 cup of milk in a large bowl.
  3. Simmer the remaining milk and sugar in a small saucepan.
  4. Stir in water-gelatin mixture and remove from heat.
  5. Add to yoghurt mixture and whisk together, add lemon juice and stir.
  6. Pour the mixture into small cups and chill in fridge for 2 hrs.
  7. For the topping, cut the peaches into halves then place them on a baking dish.
  8. Prepare a mixture of balsamic vinegar with honey.
  9. Drizzle the mixture on top of the peaches and season with salt and pepper and thyme.
  10. Place the peaches in the pre-heated oven for 30 minutes until caramelised and tender.
  11. Allow peaches to cool, and serve on top of set Panna Cotta.
