Zaatar Roasted Tomato Crostini with Labneh

Ingredients
  

  • 230 g Labneh
  • 300 g Cherry tomatoes
  • 1 Baguette
  • 2 tbsp Za'atar
  • 1 tsp Salt
  • Few grinds of black pepper

Instructions
 

  • In a bowl, combine the cut in half tomatoes with olive oil, salt, and pepper. Stir until they are well-coated.
  • Line a heavy sheet pan with parchment paper, and place the tomatoes on it.
  • Top the tomatoes with a pinch of za’atar and roast in the oven for 1 to 2 hours until they are meltingly soft and slightly shrived.
  • To make the crostini, thinly slice the baguette in 1.5 cm slices and brush both sides with olive oil. Season them with za’atar, salt and pepper.
  • Arrange the slices on a sheet pan and bake in the heated oven until they are light gold brown.
  • On each crostini place some Labneh with two or three roasted tomatoes then sprinkle some za’atar on top.
