Green Halloumi Salad with Toasted Almonds
This salad combines the ease of a 10 minute through together job with the deliciousness of halloumi cheese.

- 1 Pan or Grill
- 1 Mixing Processor
Ingredients
- 125 gram Halum cheese sliced into 1/4 inch slabs
- 1 Large head of Lettuce
- 1/4 Fennel bulb
- 1 Avocado
- 1 Small handful of toasted Almonds
- 1 Handful of basil and dill
- 100 gram Rocket arugula
- 1 Lemon juice
- 1 Cup of olive oil
- Freshly cracked pepper
Instructions
- In a large serving platter, toss and assemble the vegetables and herbs for the salad.
- Grill the halloumi in a pan on high heat till they have a lovely caramelized crunchy surface.
- Prepare the pesto sauce by mixing in a high-speed processor the rocket arugula, lemon juice, almonds, and olive oil. Adjust for pepper, lemon juice and salt.
- Assemble the salad bowl by arranging the halloumi on the plate and finish with the pesto dressing.
- Serves while the halloumi is warm.
